When I moved to America decades ago, I was shocked and, to be honest, a bit disgusted that tomatoes and meat could be bought at the same shop as toiletries and cleaning products. To make it all worse, I found the food quite tasteless and so whilst I was a vegetarian, I was likely the unhealthiest one around as my staples were salt and vinegar crisps, soda and ice cream. I was working and studying hard, and I didn’t know it then, but I was laying the foundation for the health issues that followed years later.
When my husband and I got married, we hoped to be blessed with as many children as God would generously grant us. When things didn’t happen that way, our journey with infertility and miscarriage began. We learnt about our food system, paid for medical testing that doctors thought unnecessary and made massive lifestyle changes. In as many ways as possible, I returned to the ways of my upbringing, and always to food as the foundation for good health. Our two sons are our greatest joy!
